If you grow Zucchini you might be wondering what to do with them all. They grow so quickly and even 2 plants will give you so many that you might be looking for people to give them to, just to get them out of your home. In USA they even have a Special Holiday which is “Leave Zucchini on Your Friend’s Porch Day”!
This is another recipe for patties, and they taste good hot or cold.
Zucchini and Cheese Patties
These little patties are so easy to make and taste delicious. You could easily make them bigger and use them as vegetarian burgers, or make them smaller for bite sized appetizers. I often serve them with red pepper pesto which is amazing!

Ingredients
- 2 cups grated zucchini drain and wring out if not really fresh
- 2 eggs, lightly beaten
- 1/2 cup Cheddar cheese, grated
- 1/2 cup Breadcrumbs
- 1 Tbsp Fresh basil, chopped
- 1/2 tsp garlic
- 1 Tbsp Fresh parsley, chopped
- 1 small red onion, finely chopped
- Olive oil to fry
- Salt and pepper to taste
Instructions
- Wrap the zucchini in a clean tea towel and wring out until it is very dry. With really fresh zucchini there will be very little water
- Combine the zucchini with all of the other ingredients. It will be quite soft but shouldn't be runny. Add more breadcrumbs or a bit of flour until it is able to hold its shape
- Take a small handful and shape it into a pattie. Repeat with the rest of the mixture
- Warm the frying pan over medium heat and then add the olive oil.
- Place the patties into the pan, leaving some space around them so you can turn them over
- Cook for 5 minutes on one side and then turn over and cook for another 5 minutes. If they brown too quickly, turn the heat down
- Serve them hot or cold
