Sweet Violets have the most glorious colour and this jam shows it off beautifully. Be warned, the petals weigh next to nothing, so it takes a while to collect them.

Sweet Violet Jam
A beautiful coloured jam which would make a perfect gift for a mom or granny. A word of warning, 250g of violet flowers is a lot!
Ingredients
- 250 g violet flowers Pick all green bits off. You want just the purple petals
- 600 ml boiling water
- 750 g sugar
- ½ cup lemon juice
Instructions
- Boil the water, add the sugar and stir until it has dissolved. Add lemon juice and simmer until thickened.
- Remove from the heat and stir in the flower petals.
- Pour into small sterilised jars. Seal and label.
