If you have a lot of violets in flower, and even more patience, this is a beautiful jam to make. Make sure you take all of the green bits off the flowers or the colour won’t be perfect
Sweet Violet Jam
- 250 g violet flowers Pick all green bits off. You want just the purple petals
- 600 ml boiling water
- 750 g sugar
- ½ cup lemon juice
- Boil the water, add the sugar and stir until it has dissolved. Add lemon juice and simmer until thickened.
- Remove from the heat and stir in the flower petals.
- Pour into small sterilised jars. Seal and label.
