Sweet violets Barefoot HerbsSweet Violets have the most glorious colour and this jam shows it off beautifully.  Be warned, the petals weigh next to nothing, so it takes a while to collect them.

Sweet Violet Jam

A beautiful coloured jam which would make a perfect gift for a mom or granny. A word of warning, 250g of violet flowers is a lot!
Cook Time 45 minutes
Picking the flowers 1 hour


  • 250 g violet flowers Pick all green bits off. You want just the purple petals
  • 600 ml boiling water
  • 750 g sugar
  • ½ cup lemon juice


  • Boil the water, add the sugar and stir until it has dissolved. Add lemon juice and simmer until thickened.
  • Remove from the heat and stir in the flower petals.
  • Pour into small sterilised jars. Seal and label.
