There are some herbs that I use nearly every day, and parsley is one of them. Perhaps because I have a huge pot living on my doorstep which makes it super convenient, but also because I love it and it goes with everything!
I always think of parsley as the distinguished gentleman of the herb garden. He gets along with everyone in the garden, food and medicinal remedies and, in a gentle, unassuming way, enhances the flavours of other herbs and vegetables.
Do you know why parsley is so often used as a garnish? The Romans placed a sprig on their plate to ward off evil spirits and, when the meal was finished, they ate it to discourage intoxication and freshen their breaths. I don’t think it helps much with over-indulging in drink, but it definitely cleans up the breath – even after eating garlic.
During the Middle Ages it was believed that it would only grow well if a witch or a pregnant woman planted it ,and it had to be on Good Friday. Unless you want to wait a while and then find yourself a witch, I would suggest you throw some seeds down now. As it doesn’t like to be transplanted it is best to sow the seed directly into the ground. It can take up to 6 weeks for it to germinate so be patient. Parsley will grow in full sun but prefers some shade, especially in South African summers.
CULINARY USES
Parsley is so often used with other herbs, that we tend to forget how delicious it is when used alone, especially when it is freshly picked. This simple recipe for Parsley Spaghetti makes the most of the flavour, and you don’t have to worry about the garlic – the parsley will take care of any garlicky smells.
MEDICINAL
Parsley is rich in Iron, Vitamins A, C and E, antiseptic chlorophyll, and flavonoids, which makes it a good detoxifying tonic herb. Make an infusion with 1 Tbsp fresh herb and 1 cup of boiling water. Let it stand for 10 minutes before drinking it
The roots and seeds are used for kidney stones, as a mild laxative, and promotes delayed menstruation. All parts of the plant are a natural antibiotic, and it is supposed to be an aphrodisiac.

Parsley is an excellent herb for anyone with dry or sensitive skin. Use it in steams, face masks, cleansers, creams and oils

A great companion plant for the vegetable and flower gardens. repels asparagus beetles and attracts hoverflies and other beneficial insects. The moss curled parsley looks really pretty as an edging plant and, if you grow it next to your roses their scent will improve
