Parsley Spaghetti is a very simple dish which makes the most of freshly cut parsley. It is a wonderful meal for those days when you are rushed or don’t want to spend ages in the kitchen. While the spaghetti is cooking, prepare the parsley oil, and you can have supper ready in 15 minutes.
A tomato salad is a perfect side dish if you need a little extra something.
Parsley Spaghetti
Don't let the simplicity of this dish fool you. Fresh parsley is the perfect partner for garlic, and it also neutralizes the smell! Use fresh parsley and garlic, dried doesn't work here. A tomato salad works well as a side dish.
Servings 4 people
Ingredients
- 500 g Dried spaghetti
- 6 Tbsp Extra virgin olive oil
- 2 cloves Fresh garlic
- 4 Tbsp Fresh parsley
- Black pepper to taste
- Parmesan cheese to serve (leave out for vegan)
Instructions
- Cook the spaghetti as per packet instructions
- While the spaghetti is cooking, finely chop the parsley and garlic and mix with the olive oil
- Add black pepper to taste. The spaghetti will be cooked with salt, so do not add to the oil
- Drain the spaghetti and return to the pot
- Add the flavoured oil and stir well
- Serve topped with grated Parmesan cheese
