Hyssop gives this vinegar a fairly robust flavour which can over-power delicate salad leaves. However, it is great with root vegetables, tomatoes and other stronger flavoured vegetables and grains.
Like most vinegars, it has uses other than culinary and can be used as an astringent, added to the bath water, or used as the final rinse water for hair
Recipe
Pack a clean jar with fresh flowering tops of hyssop.
Fill the jar with white wine vinegar or apple cider vinegar, covering the herb completely.
Leave in a warm place for 2-3 weeks. Strain into a sterilised bottle and label clearly.
Splash a little onto the face after cleansing. add 1 cup to a bath of water or pour 1/2 cup over your hair after the final rinse
