Cure-All Chicken Broth

Our grandmothers were right.  Chicken broth is a cure-all.  whether you are sick, feeling a bit under the weather, or just in need of a comfort drink, chicken broth will go a long way to help.  Ask Sid


2-1/2 pounds bony chicken pieces (legs, wings, necks or back bones)

2 celery stalks with leaves, cut into chunks

2 carrots, cut into chunks.  No need to peel if organic

2 onions quartered -no need to peel

2 bay leaves

1/2 teaspoon dried rosemary, crushed

1/2 teaspoon dried thyme

8 to 10 whole peppercorns

3 litres water


1. Place all ingredients in a large pot. Bring to a boil; reduce heat until mixture is just at a simmer. Simmer, uncovered, for 3-4 hours, skimming foam as necessary.

2. Set chicken aside until cool enough to handle. Remove meat from bones. Discard bones; save meat for another use. Strain broth, discarding vegetables and seasonings. Refrigerate for 8 hours or overnight. Skim fat from surface as it cools.

3. Warm and drink as a broth, use as a base for soups or stews
