Spring Tonic

There are so many recipes for spring tonics and it is a good idea to take one every day, never mind just once in spring.  This is full of minerals and sure to give you a spring in your step! If you don’t have all of the herbs you can either use dried or substitute with what you have.  Try parsley, fennel, lime or lemon tree leaves and even lettuce

2 Tbsp young nettle tops

1 Tbsp fresh mint

1 Tbsp fresh borage leaves

1 Tbsp blackberry or raspberry leaves.

600ml boiling water.

Pour the boiling water over the chopped leaves and leave to infuse for 15 minutes.

Strain and take 100ml twice a day for three days
